Enjoy your holiday weekend!

We are SO excited! We have company coming for a few days and lots of plans for FUN!

I woke up and realized something I have done wrong with my health lately. (My Dad used to say, I wake up in a new world every day! lol)

We came to the mountains of NC from Florida and I always experience some affects of the elevation change. It makes me a little dizzy for a couple of days. But this time….I cut off my source of Vitamin D. I had been sitting outside in the sun every day in FL …..working on my tan and enjoying the relaxing benefits of the sun. So when I got to the condo….I stayed inside! And then I wondered why I felt so tired.

So we have some outdoor activities planned for the weekend….and I took a Vitamin D with my Multi Vitamin this morning! I’m sure I’ll have LOTS of energy to keep up with grandkids! Hope this stuff works FAST! teehee!

I made an Oatmeal cake using a recipe I have had for years…and made many times before!

Oatmeal Cake

1 1/4 cup boiling water
1 cup oats
1 stick butter
Mix these 3 ingredients , cover, let stand 20 minutes.

2 eggs, beaten
1 cup brown sugar
Mix these together.

1 1/2 cup flour
1 tsp soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Stir together.

Add flour mixture and oat mixture to sugar and eggs.

Bake at 350 in greased 9 inch square pan, 40 minutes.

Icing

4 Tbsp butter
1/2 cup evaporated milk
1/2 cup sugar
Boil 5 minutes.

Add 1/2 cup pecans
1/2 cup coconut (organic,unsweetened)
1 tsp vanilla
Pour over cake and return to oven to brown

I used about twice as much coconut and pecans for this cake! YUMMY! I’ll eat the fruit….really I will! lol

Well! i do hope you feel better..and get some much needed vitamin D into your system!

I like what your father used to say...and I think I shall adopt that saying as well....I certainly woke up in a new world this morning today too! lol I think it's a better thing to say than the old saying, "woke up on the wrong side of the bed"...am I right!!!!!

Just started taking Vitamin D myself and have noticed some subtle changes...a bit more stamina. Have great fun with your friends! How exciting! That oatmeal cake looks something like one my aunt used to make only yours looks even better!

What a wonderful recipe. I bet it is delicious.

I haven't been on for a few days as I have been with my granddaughter who is visiting me for a few weeks.

I went back throught a few of your earlier posts. I am glad that you have figured out why you are so tired. I hope that vitamin D kicks in quickly.

I loved your dolls on Wednesday, I would have to say Angelique is my favorite. She was so pretty in all that beautiful pink.

Your oatmeal cake looks so good! I love anything with oatmeal so I'll keep this recipe and try it later.

I had to take Vitamin D by prescription last winter. It was so horribly cold I hardly went outside!

so Diane, do you still have your home in North Carolina? I bet it is lovely too. How are the beaches where you are. That is so unfortunate to put it mildly. Its actually tragic. I do hope that they can find a way very soon to stop the flow. Fortunately we don't see any of the spill on the west coast so far.
Your cake looks so yummy minus the large coconut. Just can eat it. I love it but it doesn't love me back.
