Flavorful Chicken Salad

I’m going to share some healthy recipes and easy dishes on my blog this year. We eat really good meals but it requires a bit of planning ahead. Sometimes people eat the wrong foods because they wait until the last minute to decide what to have, especially for lunch.

When we grill chicken we always make extra. Hubby puts natural spices on the meat for flavor.

Then with what is left over, I make chicken salad, enough for more than one lunch.

Diced chicken and celery with a generous dollop (or 2) of Real Mayo.

Then I add boiled eggs and a few Craisins.

When I’m ready to eat a serving (there are about 3 servings in this bowl), I sprinkle sliced almonds on top. Sometimes instead of Craisins, I put grapes in the salad when I’m ready to eat it. (If you put the almonds or grapes in early, they will get soggy.)

I store it in this Corelle bowl with it’s very own lid.

Enjoy with a few Multigrain Wheat Thins for a yummy and satisfying lunch.

Now what should we have to drink?

This is almost the same chicken salad I make - I do add grapes - cut in half usually - but don't use the nuts (dietary restriction for Don). I think a nice glass of decaf iced tea would be delicious with this salad.

Come on over my dear - we'll have lunch together - or should I come there so we can sit on the deck for lunch?

This looks delicious. You're so right, that if we don't plan ahead, it is easy to grab whatever's available, and it may not be as good for us.

Yummy! I love chicken (or turkey) salad with chopped celery and apple. Do sometimes add grapes as well. Love the idea of almonds and craisins too. Every once in a while, I add a bit of curry to the mayo and add chunks of pineapple to the salad - that's good too!

Your chicken salad looks great - and healthy! It is a very good idea to make extra chicken to use for chicken salad, or to use in Alfredo, or to top a green salad.
I eat light for lunch. Usually something like 1) a smoothie made with yogurt, milk and fruit; 2) yogurt and an apple; or, like today, something healthy I could scrounge up. Today it was an avocado, a clementine, milk, and 1/4 cup of peanuts.

My beverage at lunch is always calcium fortified OJ & it would go so well with your yummy chicken salad! Craisins or grapes + almonds, save some for me!

Chicken salad is one of my favorites. I enjoy a green salad, a good sized dollop of chicken salad with almonds and grapes and yummy!! No extra salad dressing! Your recipe sounds very good--must try!

You are spot on about planning, especially for lunch. That seems to be the one meal that derails me. Today we went to the market and I finally had the good sense to pick up a pre made salad to take to the beach tomorrow.

Chicken is so versatile, and I love chicken salad (minus the celery..hubby won't eat that), but adding almonds and cranberries, dried cherries, etc. really elevates it to something soooooo good and healthy.

I make mine about the same way but I'm glad you reminded me of it as I forget about lunch meals which would suffice for supper for me. I only eat about twice a day but I should eat more often and smaller amounts. I've not tried the multigrain wheat thins. I stopped eating most processed items years ago but they are coming out with healthier versions now. If you want it even heathier try the new Hellman's Mayonnaise with olive oil. I was hesitant because I am a dyed in the wool Hellman's fan and I never liked their fat free version but the olive oil was really good. Chicken salad is usually a summer meal for me but it sounds good about now! And it is summer for you for sure! LOL!

This is the yummiest looking chicken salad that I've ever seen! You know, I thought I was the last one to own the Corelle dishes. I have those same bowls. My mother had them also when I was growing up. :~)
