Chicken Pot Pie and Pinwheels!

It’s actually been cold enough lately to use the oven here in Florida!

So I made a Chicken Pot Pie! One of my favorite dishes (that I NEVER make! lol).

I had cooked a roast chicken in the oven a few days before, with potatoes, carrots, celery and onion. (I’ll give you that recipe another time) So I had good ingredients to put in the pie.

I made a white sauce, butter, flour a little salt and pepper and milk and added the chicken and chopped up veggies. I wanted even more veggies, so I cooked a few mixed vegetables in a bowl in the microwave for a couple of minutes and added them too.

I made a pie crust recipe and used 3 cups of flour to have enough for hubby to make pinwheels. I divided my dough in thirds. I’ve made a lot of pie crusts over the years and my secret for flaky crust is…don’t overwork your dough. Add just enough cold water to the flour and shortening mixture and don’t keep ‘beating’ it!

(put a ‘little’ butter on top)

Put bottom crust in large pie plate, warm veggies and chicken then cover with top crust. Cut slits in the top for steam to escape. And I put a piece of foil under the pie plate just in case.

Serve hot!

I froze some of mine for another cold day.

so that hubby can make pinwheels with lots of butter, cinnamon and sugar!

He baked them at 375 for 20 minutes in the toaster oven.

He didn’t need to freeze any of his! haha!

We cooked together and had fun so…

Yum & Yum!! Both of your creations look delicious to me. I haven't had chicken pot pie in ages. Not sure why as I do love it.
This brought back memories for me. When I was a kid my mom would give me her leftover pie crust scraps to make pinwheels with. Haven't tasted one since those looooong ago days :).

what a great team you make, everything looks so delicious! my grandma used to bake pies all the time and when she'd trim her crusts she'd sprinkle cinnamon and sugar on the trimmings and bake those...loved those little cinnamon and sugar snacks!

That looks so good. I have a friend who always takes chicken pot pie to sick friends when they need a meal. She makes hers in a 9 x 13. Boy I have forgotten about those cinnamon pin wheels! I used to roll those up with the left overs of apple pie dough. They would be fun to make again!

I bake my "veggie" chicken pot pies in those single aluminum pie pans and then freeze some for later. One of the best comfort foods! Stay warm, Sis

What a beautiful pie crust you make! It looks like something out of a magazine! That is a great idea for a dinner and I haven't made it in a long time either. I love your husband's pinwheels. My Mother used to do something similar with leftover pie crust. She would roll it out and put the cinnamon and sugar on it but she didn't roll it up. They were more like cookies. I'm hungry now!

Yum and yum!! Your house must have had that wonderful comfort food aroma. My husband is only, now, beginning to cook a little. It's kind of nice to have some company in the kitchen.

That chicken pie does look yummy as does those cinnamon rolls--
and I know what you mean about having the oven on in Fl--
I am doing a meat loaf and biscuits in the oven tonight cause it has been cooler here--my kids now know that my oven is closed from May to Oct--at least--!!!!!!!!!!!!!

Oh that pie looks delicious, and something I haven't made in a long time...might just have to pull out my recipe book and see if I can figure out how to low carb it. The pinwheels look yummy too, and I would have no trouble finishing those off!

Oh Diane, your chicken pot pie looks delicious. I just had one the other day, but it was the frozen kind, yet still good. It's nice that you spent time preparing this for dinner, and those pinwheels with butter, cinnamon and sugar look Yummy. I can see why they didn't last long. :) Sometimes baking during the cold winter months is nice, isn't it?

I love pot pies but my husband hates them. How can two people be so different? So I eat them when he can have something else. Like at a restaurant. I am terrible at making pie crust so it's probably just as well I don't make them.

My sister and I used to make those pinwheels out of my grandmother's left over pie crust when we were little. They never last long.

I have not had chicken pot pie in ages and this one looks so good. The secret is in the sauce, isn't it? And the crust. Your's looks perfect. Hmmm. I've a chicken in the freezer!

wow this looks yummy! I love making homemade chicken pie! Haven't done it in a very long time though! Maybe this weekend! It's getting colder here again so we'll need some comfort food! those pinwheels look delicious too! I bet it's been 20 years since I made those! I can see right now that you are a great cook. You have it down to a science! I never thought of warming the crust then adding the veggies and chicken. I learn a lot from my friends.

Your husband makes some fancy pinwheels. Since he cleaned up the left over pie dough, just wondering if he cleaned up the kitchen. Hee! Hee!

Oh I LOOOOVE chicken pot pie. If I have any gravy left over, I add that to the white sauce for more flavour. Yummm, comfort food!

Oh My, saw this post too and had to stop by. We LOVE chicken pot pie and I make it often too. Yours looks delicious and those Pinwheels look yummy too. I have only had a grapefruit and I am getting hungry...LOL~
