Eating healthy + a Low Carb Pancake Recipe!

Eating healthy just got easier for us! Earth Fare is opening a nice big store in our town. It's always been our favorite place to shop in Asheville and now we have one here! YAY! We are SO excited!

We love their 'homemade' soups and bread...and organic produce...nuts and dried fruit...oh and cheeses! Well, we love everything they sell!


 Lots of articles in our local magazines this month.
 And now for the Low Carb Pancake Recipe! I have Christine at Preferably Prim to thank for this recipe. So go there to see the beautiful photo she took of hers. Mine are still on the griddle and they didn't spread exactly round like hers! haha!


You use one egg, one banana and one tablespoon of flour...that's ALL! She gives the directions for mixing it together HERE! They did not give me a sugar rush at all! I ate mine hot with butter on top (no fruit) and they were delicious! I've made them a 'few' times now, Christine! Thanks!

That is great to have that store that you like open up by you. It's so nice to shop for healthy foods. I will have to try that pancake recipe out since it looks so easy to make. Hope you have a great day.

I've never heard of Earth Fare, but it sounds like the kind of store I would like to go to. The pancakes sound so easy and so good. I'm going to try them.

Eating healthy becomes a way of life. Other than craving salt, my diet is a pretty healthy one. Now I can't say the same for Louis Dean and he is a heart patient and should REALLY be eating healthy!

I make those, too, Diane. I always use a heaping Tbsp of Bisquick because I don't have self-rising flour. They don't have to look pretty to taste good, you know!!! lol Have a wonderful week. We are wading through rain here. xo Diana

Your pancakes are similar to the ones we make. Ours are made with pumpkin (instead of banana).... No flour at all in ours...Delicious!!!! Think I'll try yours sometime... Thanks!!!

Never heard of Earth Fare... Maybe there is one in Knoxville --but definitely not here in our small town!!!! I need to check it out and see where one is...

Earth Fare sounds like a great store! I was excited about the pancakes until I read down the ingredients to flour. I am gluten intolerant so I cannot eat flour. It sounds like a delicious pancake.

I've not heard of Earth Fare before...I know...I lead a sheltered life. :) But it sounds like a lovely place to shop for good wholesome food!

Your pancakes look so good! I'll have to check out Christine's site to see about the directions for mixing, etc. We love a good pancake.

I have seen this recipe before and it looks yummy. We love pancakes at our house but admit to soaking them in butter and syrup. We've been losing weight here so maybe your recipe is what we should do.

What an easy pancake recipe! I will have to give that a try, how nice to eat a pancake without the sugar rush! And I've never heard of Earth Fare but it sounds like a marvelous place to visit and eat!
