So Simple and Easy…Homemade Tortillas

I don’t do many posts about food. We don’t cook elaborate meals. Living here in Florida we grill most of our meat and then do simple veggies for our sides. Often we even grill our veggies.

But I get so hungry for Mexican food…Tex Mex!

So last week when I made Tex Mex, I remembered to take a photo of the homemade flour tortillas.

They are so easy with only a few ingredients.

Tortillas

2 cups flour

1 tsp salt

1/4 cup shortening

1/2 cup warm water

Combine flour and salt, cut in shortening until crumbly. Add warm water until dough holds together. Knead for a couple of minutes. Divide into 6 equals parts and roll out into a round circle.  Cook on hot ungreased griddle, 1 minute on one side, flip for 30 seconds on the other side. Stack in a cake pan, cover in foil and keep in 300 degree oven until ready to assemble.

Too bad I didn’t take a photo of the ‘full meal’! lol But when dinner’s ready around here we only think about eating not taking photos.

You can use your imagination and fill these with whatever filling you have on hand.

We grilled a flank steak. I sauteed  strips of onion with red and green sweet bell peppers. Then we filled our tortillas with some of the meat and veggies, grated cheddar cheese and a dollop of sour cream….oh and a big spoon full of salsa. But you could use ground meat or chicken, too. (avocado or homemade guacamole is amazing, too)

We ate ours with rice and corn on the cob. Use your imagination!

And these tortillas don’t have preservatives, artificial colors and unnecessary ingredients. Just plain and simple….and home made good!

I was looking for a good photo that I had taken of Mexican food and found this one of ME taken 5 years ago at Papa’s & Beer on my birthday! How embarrassing! hahahaha!!!

When we moved to Massachusetts after living in California for ten years, I hated not having fresh tortillas. I started making my own and I can vow they really are easy and so good. Love the sombrero! XOXO

Fresh tortillas are just as wonderful as fresh bread in my book. I've never made them homemade though. Looks wonderfully delicious.

Mexican is my favorite food choice. I cook it at least every other week, mostly I do chicken enchiladas.

I love homemade tortillas...and they are easy to make. They don't last long enough around here to be frozen, but I have heard that you can do that too..I would love to get a tortilla press one day.

Diane, we are twins. My husband took me for a Mexican dinner for my birthday April 15th a few years back and I asked the guy if I could wear the Sombrero and my husband took the picture and I DID post it!!!!!!
DON'T be embarrassed I wasn't I think we look cute and you look cute as a button. We only live once so enjoy it that is what my hubby always says!!!!!!
