I have exciting news! You can eat meatloaf in the good ole’ summertime without turning on the oven!
Serve with Lindeman’s Shiraz!
We had grilled meatloaf in a restaurant years ago and from then on, that has been the only way we’ve cooked it! You can never go back!
So what’s different about the recipe?
Use your favorite meatloaf recipe but don’t put as much tomato sauce in the mixture so that it is a bit dryer. So basically, we are mixing ground meat, bell peppers (red and green), onion, Italian bread crumbs and spices with a little tomato sauce. Mash it into a big ‘hamburger like patty’...one pound of ground meat....one big patty!
Mix a sauce to pour on top when it’s done. Since I can’t eat sugar, I mix mostly tomato sauce with just a dollop of ketchup and pour on top. (hubby slices the ends off for me..they are the best!)
Cook thoroughly. It will be crispy on the outside and moist on the inside! Save some for cold meatloaf sandwiches! OH MY...so GOOD!
I’m joining my girlfriend, Shannon at
Cozy Home Scenes for this fun party!
Have you ever eaten grilled meatloaf?
You’ll love it!

What a great idea! I do love meatloaf but not the oven in the summer. :)

Wow never thought of that, hubby loves meatloaf but I do not do many oven meals in the summer just too darn hot..??? Wait a minute?? I use my oven for drying creations all year long hmmm LOL

No, but now I want to try it! It certainly looks delicious and it's far better than turning on the oven in this heat.
Sounds yummy. I'll have to try sometime. Thanks for the info
Hugs,
Pat
Oh my! But that meatloaf looks delicious!!! Thanks for the idea! Cathy
That sounds very good. And cold the next night would be tasty too. Pamela
Great idea! When we fix meatloaf, we usually make individual-serving sized loaves. After shaping them, we let them cook on a cookie sheet with parchment paper liner. And I've topped my meatloaf off with bottled chili sauce! Love it that way!
Oh my gosh, I came over to thank for your kind words and well, now I am drooling. This is awesome! So smart...you see things like this and think genius, of course! We'll have to try it this summer. I am going to pin this from your blog. Hope that's okay!
Diane, this sounds fantastic! I'd like the ends best too. Nice and crispy. I'm going to keep this in mind for the weekend - providing it ever stops raining!
oh that sounds sooo good I can't wait to try it out I know that I can never make it in the summer with the heat but this is a great idea...

This is going on my menu for next week. I make a weekly menu so I know what to buy at the store. Saves me so much time and money ;)
I'm glad you posted your meatloaf Diane. When you told me about this a few weeks ago, I wondered how you did this. Your meatloaf looks very tasty with the vegetables. Like you, my favorite part of the meatloaf is the cripsy end. Yum! Thanks for linking up again to the Grill, BBQ, And Picnic Party!
Looks wonderful! Hugs and blessings, Cindy

Hi Diane, I am definitely going to try grilling the meat loaf. I discovered Monday while in the grocer store, there's a tomato sauce for meat loaf in the canned tomato aisle.
I did not buy any - I have always used ketchup.
This is truly brilliant! I will try this recipe.
I am going to try that tonight! Sounds delicious!
