Eat Healthy!

I eat healthy most of the time! And with my healthier eating plan AND a lot of hard work (I don’t mean hard work to try to lose weight, I mean literally the HARD WORK of helping someone clean their house out and move, up and down a flight of stairs, etc)..and exercise I have now lost 11 pounds! That’s probably all I will lose and I’m not sure I will keep it all off, but we’ll see. It IS hiking season here in Florida now so I should be more active for the next few months.

This is a typical lunch for me. Hubby grills extra chicken so that I have leftovers for my lunches.

I’ve added avocado slices and a few Craisins to this healthy salad. I like Butter Lettuce best and usually have just a few Wheat Thins on the side!

But does that mean I never get hungry for something ‘less than healthy’! Oh no, my friend!

I don’t know what made me think about Nachos but I just HAD to have some!

I bought Tortilla chips and Jalapeno Pepper slices in a jar. I had everything else I needed!

I placed a layer of the chips on a cookie sheet, on foil!

Then I grated all kinds of good cheese: sharp cheddar, American and  Havarti and sprinkled most of it on top. Next the Jalapeno Pepper slices (they were only $1.23 for a jar…and a FEW goes a LONG way! they are HOT!)

Then more cheese on top of that!

Bake for about 10 minutes at 350.

We put chunky salsa, guacamole and sour cream on top. I took a photo of the homemade guacamole I made but it looked awful, kind of all green and mushy! teehee But it tasted wonderful!

We grilled hamburgers and made some sweet corn. Man….or Woman should can not make a meal out of Nachos alone (or eat salads at every meal!) lol After all, it is Fall….and Football season!

I love Nachos. I am always trying to make them a little healthier. My new favorite chips for them are some black bean ones made by a company called Way Better. They are pricey but so good. I have proved to myself over and over again that I feel better when I eat like you are showing.

It's nice to lose weight without trying and helping others in their hard work! Your nachos look so good! Yum. Every so often a cheat is needed, right?

The word 'healthy' is often misleading. To me healthy is whatever doesn't add to body weight, as weight gain is very unhealthy.
Daily physical activities such as climbing stairs, walking, cleaning the house - are healthy as they can prevent weight gain (they don't help you lose curent weight, though).

Kudos, Diane. I wish I could get my weight down. I remember being a size ten with a little pooch of a tummy...oh boy I wish for those days back. LOL I like salads way more than they like me. Reflux is bothered by salad at times. Good for you helping other with their work. A woman's work goes on and on....or so it seems. Blessings, xoxo, Susie

Good for you Sis! I lost weight when I was moving my Mom to GA. Now that she lives next door and cooks all the time I've gained! Mom is at the point in life that food is one of her enjoyments and I eat along with her. I need to cut back as my weight has gone over my 'high' limit. Ugh! I need to add more exercise also. You always inspire me to do better.

I use the cranberries when tomatoes aren't real good, but also use dried cherries.

Congrats...it is a struggle the older we get!! I love both of your recipes. I would eat them both...but not at the same time.:)

As one who ate a couple of slices of chicken, carrot sticks, three olives, and a baby dill pickle for lunch, I don’t think I should be advising anyone on good things to eat. 🙂 Eleven pounds for you is a lot, you wee peanut, you!

I wish I could lose weight as easily Diane! I do try to eat lots of chicken and fish and vegetarian meals at least once a week, but my 60+ body seems to want to stay pudgy...lol

I do love nachos but they are a rare, once in a while treat.

I try to eat healthy, too, but I do like chips and dips and refried beans!
Now that it is cooler weather, we are having beef tips and gravy over mashed potatoes for supper tonight. And for healthy, we will begin with a small green salad (lettuce, carrots, cheese, cucumber, mushrooms, croutons) with just a small amount of honey-mustard dressing. For dessert I will eat an apple, sliced and lightly salted, while my husband indulges in ice cream!

I wish I could get myself into a routine of eating healthier and exercising. I could stand to lose some weight. I like to eat though and don't make the best choices. The salad with the chicken looks good but I don't like avocado.

Butter lettuce is my favorite, too, Diane. Yes, I did make something different this week: Orange Marmalade Filled Oatmeal Muffins! The recipe is from the Joanne Fluke book I just finished.

We don't eat healthy at all. I'm trying to cook more at home and not go out so often. Those nachos look delicious!

It is 6:26 in the AM and you are making me very hungry! Your chicken looks delicious, healthy, and doable. I like the way you two cook. I might even go for a walk today--weather permitting. Have a great weekend/

used to put em on our salad every night...until I stopped making salads, because I found they were giving us the heartburn. I have to really overdo the jalapenos now to experience heartburn like I used to have every night.

Oooh, I do love nachos. They are my guilty pleasure, much more so than anything sweet. Give me salty and crunchy every time! Your chicken avocado lunch looks scrumptious, too, and probably healthier than eating nachos.

that is my very most favorite brand of taco chips and they have to be the thin and crispy ones. i made something very similar recently when my son was home and i used up the leftover taco meat with it. we had it for a snack while we were playing board games!!

the salad looks good also but i find i am hungry about an hour after i eat a salad!!!
