If you're happy and you know it.....


 make a BLT for lunch!


Start with happy toast!


And grill the bacon!


We grill just about everything here in Florida year round!


Bacon has to be watched every minute but it is SO worth it!


Add some Kraft Mayo, a fresh Florida tomato and some Sweet butter lettuce and you have a winner! Oh and make a tall glass of iced tea with lots of ice!

We are hiking....some! But it is extremely hot so we are taking it easy.

Shorter hikes, closer to home.

And I'm using my time inside to get a little more house cleaning done. 

No pics of my clean house? There may be a reason for that! hahahaha!


But I have made 2 pretty journals lately.


And now they are ready to be decorated and finished.


I have to admit to jumping around on my junk journals lately and not completing any of them. When I find something pretty to add to one of them, I pull it off the shelf and work on it again. That's part of the fun of these journals. You can keep adding 'junk'!


What have you been doing this week? Do you have something I should try cooking on the grill? I'm open for suggestions!

I could live on sandwichs for all 3 meals each day. bacon like this is one of my favorites, except i have never had it grilled. I am afraid of our propane tank grill and bob has to be begged and pushed to use it. I did haggle with him to cook boneless pork ribs Sunday and we will eat on them all week.

We love BLT's for lunch or dinner. I've never grilled bacon on the grill. I usually make the bacon in the oven. We love grilled chicken or steak. Taking a break from hiking is a good idea since it's so hot out. Working on your journals sounds like fun and relaxing idea. I hope you have a nice week Diane.

I love a blt (or even a bbt -- basil, not lettuce) or even just tomato and basil sandwich. One of summer's pleasures. The journal spread is just beautiful!

Your BLT looks so good. Now I want one. But mine would have to be a BT because I don't have any lettuce! Enjoy your housecleaning. Being inside with the AC cleaning is better than being outside on a day like today.

I'll take TWO PLEASE-- Those delicious sandwiches!! LOL,!! One of my favorite summer suppers!!-- or anytime really . I could prolly eat those every day and be happy. Like you-- I don't like " babysitting the bacon"--- but yes it's worth it!

I boil my bacon in a large skillet. I even have some thawing in the fridge so I can have a BLT tomorrow. Alas, I need lettuce and tomato.

Your "happy" bread looks tasty and hearty. Is it really a brand?

Good for you guys for staying active, yet pacing yourselves. Way too hot for heroics!

Yikes...we even think it's too hot to grill outside! LOL. Since our son moved out we haven't attempted to grill because he is the grill cook and didn't seem to mind the heat outside since he worked in the outdoors all the time. I think when he comes home again (usually on the weekend to do his laundry and mow our yard), I may ask him to grill up some chicken, etc. for us so we have some done for meals ahead of time. That's a great idea! Thank you for the idea! LOL. I love BLT's btw. And your bread does look happy!!! So cute. Enjoy your walks while you can. We've take a few shorter walks in the evening. It's just been way too hot for us old folks. LOL.

Short walks early in the day. That's the summer ticket!

To quote a famous chef: "All food is made better with the addition of bacon."
Oh, wait. I said that.

Stuff to grill.

Zucchini sliced lengthwise and brushed with olive oil.

Bring a pot of water and fresh Florida corn on the cob to a boil. Remove the corn, brush with garlic salted butter and grill briefly on all sides.

In an aluminum pan, place slices Florida avocado lightly salted and with a bit of fresh lime juice, heat over a wood fire. (Add the slices to your yummy BLT!). That avocado makes a great salad with some of that grilled corn sliced off the cob. Just add chopped hearts of palm, red onion, tomato and a bit of jalapeno and cilantro.

Oh, while the fire is hot, toss on some smoked sausage to intensify that wood flavor for tomorrow's breakfast.

That's it. I just ate but now I'm hungry again.

I LOVE BLT's. We are still waiting for our tomatoes to turn red, this week we should have cherry tomatoes to eat and soon the big ones for BLT's.
We have never grilled bacon, I will have to let my husband know one can do that. Hee Hee!

Your BLT looks scrumptious!

I never tried cooking bacon on the grill! Does it flare up a lot? I've seen more and more grilled fruit shown in summer magazine articles--halved peaches, watermelon slices, and pineapple slices. I never tried it but I imagine the grilling increases the sweetness of the fruit a bit.

Your junk journals are cool to look at! I love the quote. Stay cool!

We used to love BLT when I was a kid (but we did not eat bacon instead we had something called Beef-fry made from beef and it looked like bacon. -everyone loved it. Your sandwich brings back memories.

Now that's my idea of a perfect lunch. That is if the iced tea is "unsweet" :). I have never even thought to grill bacon. Sounds like a good idea to keep the grease and smell outdoors. We'll be grilling salmon burgers for dinner tonight.

That is ONE delicious looking BLT! Haven't had that in awhile. Oh, how I love your art journals, Diane. And you placed in there that same picture that I have of the woman with the roses. It reminds me of my mom, and now I will think of her today. And that is a neat picture of the other woman also. The journal you are creating looks like it's filled with so many fun things. It's nice staying inside sometimes and getting things done around the house. Sounds like you're doing just that. : )

*a grilled cheese sandwich sounds good to cook on the grill. I always use Velveeta cheese for that.

Diane - grilling bacon - that's a new one - sounds delish! My husband makes mean fajitas on the grill - the peppers and onions are grilled as well. Yum! That sweet butter lettuce takes me back - when I was young, we used to have spinach and sweet butter lettuce sandwiches. I have been playing in my garden this week! we make BLT's all the time right now, i have soooooooo many tomatoes, i wish i could share them with you!! your BLT looks really good, but i have to have hellmans mayo on mine, and it must be on both sides of the toast/bread. we have been toasting brioche rolls and the sandwiches have been very enjoyable and they don't rip up the roof of your mouth!!

it has been very hot and humid here too, but it just started to cool off a little so we are trying to get out and do the things we have been waiting to do!!

the journals are so pretty. it is so much better to work on journals than to clean the house!! *wink*
